Ingredients
For the Chicken Marinade
- 1 pound boneless chicken thighs
- ⅓ cup dijon mustard
- ¼ cup honey
- 1 tablespoon olive oil
- Kosher salt and pepper, to taste
For Basting Sauce (optional)
- 3 tablespoons dijon mustard
- 2 tablespoons honey
For the Broccoli
- 4 cups broccoli florets
- 1 to 2 tablespoons olive oil
- Kosher salt and pepper, to taste
- Garlic powder, to taste
For Garnish
- Chives, chopped
Instructions
- Marinate the Chicken: Place the chicken thighs in a bowl or resealable plastic bag. Whisk together ⅓ cup dijon mustard, ¼ cup honey, and 1 tablespoon olive oil. Pour this marinade over the chicken, making sure each piece is well coated. Cover and refrigerate for at least 30 minutes, or preferably overnight to enhance flavor and tenderness.
- Prepare the Grill and Basting Sauce: When ready to cook, preheat the grill to high heat. Remove the chicken from the fridge about 20 minutes before grilling to bring it to near room temperature. In a small bowl, whisk together 3 tablespoons dijon mustard and 2 tablespoons honey to create the basting glaze for the final grilling stage (optional but adds extra flavor).
- Season the Broccoli: Place broccoli florets in a bowl and drizzle with remaining olive oil. Sprinkle generously with kosher salt, black pepper, and garlic powder. Toss well to coat all florets evenly. Arrange the broccoli on a grill pan in a mostly single layer, or create a foil tray by layering 2 to 3 sheets of aluminum foil and folding up the edges.
- Grill the Chicken: Place the marinated chicken on the hot grill. Grill for 5 to 6 minutes per side, turning once, until the internal temperature reaches 165°F (74°C). During the last 2 to 3 minutes, brush the chicken with the prepared honey mustard basting sauce for extra glaze and flavor.
- Grill the Broccoli: Position the broccoli on the grill alongside the chicken, whether on the grill pan or foil tray. Grill with the lid closed, tossing the florets every few minutes, until they develop char marks and are golden and tender—about 10 minutes total.
- Rest and Serve: Remove the chicken and broccoli from the grill. Let the chicken rest for 5 minutes to allow juices to redistribute. Garnish with chopped chives and serve warm.
Notes
- Marinating the chicken overnight will deepen the flavor and tenderize it further.
- If you don’t have a grill pan or foil, consider using a warming basket designed for grilling vegetables.
- Keep an eye on the broccoli to avoid burning while still achieving a nice char.
- Use a meat thermometer to ensure chicken is cooked through but remains juicy.
- Feel free to swap broccoli with other sturdy vegetables like asparagus or cauliflower florets.
