This Whole Wheat Oatmeal Bread recipe combines wholesome whole wheat flour, traditional oats, and a touch of honey for a nutritious and flavorful homemade bread. The dough is enriched with egg and oil, resulting in a slightly sticky yet manageable texture. Perfect for sandwich loaves, burger buns, or dinner rolls, this bread offers a hearty and satisfying option for any meal. The baking process yields golden crusts with a tender crumb inside, ideal for fresh consumption or freezing.

  • Total Time: 2 hours 45 minutes including rising times
  • Yield: One large sandwich loaf, or 12 burger buns, or about 30 dinner rolls

Ingredients

Dry Ingredients

  • 1 cup superfine or fine whole wheat flour
  • 1 cup traditional oats
  • 1 tablespoon active dry yeast (if using fresh yeast, use 3 times the amount)
  • 1 tablespoon salt
  • 4 ½ to 5 cups bread flour or all-purpose flour

Wet Ingredients

  • 1 cup warm milk, not hot
  • 1 ½ cups warm water
  • ¼ cup runny honey
  • 1 egg, at room temperature
  • 2 tablespoons oil (such as sunflower, olive, or canola)

Instructions

  1. Combine Dry Ingredients: In a large bowl or stand mixer, stir together 1 cup whole wheat flour, 1 cup oats, and 1 tablespoon active dry yeast until evenly mixed.
  2. Add Wet Ingredients: Pour in 1 cup warm milk, 1 ½ cups warm water, ¼ cup honey, 1 room-temperature egg, and 2 tablespoons oil. Mix everything well with a wooden spoon or spatula until combined.
  3. Knead the Dough: Using a dough hook on medium speed, slowly add 1 tablespoon salt and 4 to 5 cups bread flour, half a cup at a time, allowing each addition to absorb for about 30 seconds. Continue kneading for 6-7 minutes until the dough is barely sticky and pulls away from the bowl. If kneading by hand, mix all you can in the bowl and finish kneading on a lightly floured counter for about 10 minutes.
  4. First Rise: Lightly oil a large bowl and transfer the dough, turning it to coat with oil. Cover with plastic wrap and let it rise in a warm spot for 1 ½ to 2 hours, or until doubled in volume.
  5. Shape the Dough: Punch down the dough and transfer to a clean surface. Flatten gently and divide depending on the desired shape: for dinner rolls, divide into ~30 pieces; for burger buns, divide into 12 pieces; for sandwich loaf, shape into a rectangle and roll up like a cinnamon roll. Form each piece into smooth balls and flatten as needed.
  6. Prepare for Second Rise: Dust baking pans with oatmeal or polenta and place the shaped dough pieces inside. Cover with clean kitchen towels and let rise until puffed, about 1 hour.
  7. Preheat Oven: While the dough rises, preheat the oven to 350ºF (180ºC).
  8. Optional Topping: Brush rolls with water and sprinkle oats on top, or use an egg wash for a glossy finish.
  9. Bake: Bake loaves for 30-40 minutes, dinner rolls for about 20 minutes, and burger buns for 25 minutes, until golden brown and bottoms sound hollow when tapped.
  10. Cool: Remove bread from pans and cool completely on a wire rack. Enjoy fresh for best taste, or freeze for later use.

Notes

  • To adjust bread texture, vary the amount of bread or all-purpose flour: more flour for firmer bread, less for softer.
  • Using fresh yeast requires tripling the amount compared to active dry yeast.
  • Egg wash: mix one egg with a tablespoon of water for a shiny crust.
  • Covering the rising dough with a sweater or blanket helps maintain warmth in cooler rooms.
