Instructions
- Warm the Liquid Base: In a medium saucepan over low to medium heat, combine the half and half with the espresso powder. Heat gently for a couple of minutes to warm the mixture; do not let it boil as this can affect the texture and flavor.
- Prepare the Custard Mixture: While the liquid warms, whisk together the egg yolks, cornstarch, salt, and sugar in a medium bowl. Whisk vigorously for about two minutes until the mixture lightens significantly in color and becomes smooth and slightly frothy.
- Temper the Eggs: Slowly add a small amount of the warmed half and half mixture to the egg yolk mixture, whisking constantly to gently raise the temperature and prevent curdling. Then gradually add the rest of the warm cream, continuing to whisk until fully combined.
- Cook the Pastry Cream: Pour the combined mixture back into the saucepan. Cook over low to medium heat, stirring constantly with a whisk. Continue cooking until the mixture thickens notably and starts to form bubbles on the surface, resembling a gentle ‘burp’—this indicates the pastry cream is ready.
- Finish and Chill: Remove the saucepan from heat immediately. Add the cold, cubed butter and vanilla bean paste and whisk vigorously until fully incorporated and the cream is smooth and shiny. Transfer the pastry cream to an airtight container. Place plastic wrap directly on the surface to prevent a skin from forming. Chill in the refrigerator for at least three hours or up to three days before serving. Whisk again before use to restore smoothness.
