Cooked in a skillet until golden brown and paired with a creamy, flavorful garlic and herb sour cream dip, these fritters are perfect for a quick savory treat or side dish that everyone will love.

  • Total Time: 30 minutes
  • Yield: 8-10 fritters

Ingredients

Garlic Herb Dipping Sauce

  • 1/2 cup sour cream
  • 1/2 tsp dried parsley
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp salt
  • 1/8 tsp pepper

Vegetable Fritters

  • 1/2 lb. frozen broccoli florets
  • 1 cup frozen corn
  • 1 carrot
  • 3 green onions
  • 1/4 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup all purpose flour
  • 2 large eggs
  • 3 Tbsp cooking oil

Instructions

  1. Prepare the Garlic Herb Dipping Sauce: In a small bowl, combine sour cream, dried parsley, dried oregano, dried basil, garlic powder, onion powder, salt, and pepper. Mix well to blend the flavors. Cover and refrigerate this dip until ready to serve.
  2. Prep the Vegetables: Allow the frozen broccoli florets and corn to thaw completely, either by leaving them at room temperature or using the microwave defrost function. Finely chop the broccoli florets. Peel and grate the carrot using a large-holed cheese grater. Slice the green onions thinly.
  3. Mix the Fritter Batter: In a large mixing bowl, add the chopped broccoli, thawed corn, grated carrot, and sliced green onions. Add the all-purpose flour, eggs, garlic powder, and salt. Stir until all ingredients are evenly combined into a thick batter.
  4. Cook the Fritters: Heat 1 tablespoon of cooking oil in a large non-stick skillet over medium heat until hot and shimmering. Using a 1/4 cup measure, scoop portions of the batter into the skillet. Press each mound gently to flatten it into a pancake shape. Cook the fritters for about 3 minutes per side until deep golden brown and cooked through. Cook 3 to 4 fritters at a time, adding another tablespoon of oil before each new batch. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  5. Serve: Serve the vegetable fritters warm, accompanied by the chilled garlic herb dipping sauce for a tasty contrast of flavors.

Notes

  • Make the dipping sauce ahead of time to allow the flavors to meld.
  • Ensure vegetables are well thawed and chopped finely for even cooking.
  • Use a non-stick skillet for best frying results and to prevent sticking.
  • If preferred, substitute gluten-free flour to make the fritters gluten free.
  • These fritters can be kept warm in a low oven while cooking remaining batches.
