Ingredients

Instructions

  1. Prep the veggies: Dice the onion and mince the garlic to prepare them for sautéing.
  2. Sauté onion and garlic: Melt vegan butter in a large saucepan or Dutch oven over medium heat. Once melted and bubbling, add the diced onion and minced garlic. Cook for 2-3 minutes until fragrant and slightly softened.
  3. Add artichokes and season: Strain and rinse canned artichokes, then add them to the pot along with salt and pepper (start with 1/2 teaspoon salt and 1/4 teaspoon pepper). Stir and cook together for another 3 minutes to blend flavors.
  4. Add liquids and nutritional yeast: Pour in the full-fat coconut milk, vegetable broth, and nutritional yeast. Stir well and bring the soup to a gentle simmer.
  5. Cook gnocchi: Once simmering, add the vegan gnocchi and lemon juice. Let the soup continue to simmer for about 3 minutes, until the gnocchi are soft, chewy, and cooked through.
  6. Add spinach and finish: Turn off the heat and stir in the spinach until it just begins to wilt. Taste and adjust seasoning with additional salt and pepper if desired.
