Ingredients
Brownie Batter
- 1/2 cup dairy free chocolate chips (3.5 oz)
- 1/3 cup vegan butter OR coconut oil
- 1/4 cup dutch processed cocoa powder
- 1 teaspoon vanilla bean paste
- 1 cup granulated sugar
- 1/2 cup soy milk
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup additional chocolate chips (optional)
Peanut Butter Swirl
- 1/2 cup creamy peanut butter
- 1 tablespoon vegan butter, melted
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla bean paste
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly grease an 8 by 8 inch baking pan to prevent sticking.
- Melt chocolate mixture: In a large microwave-safe bowl, combine the dairy free chocolate chips, vegan butter or coconut oil, and cocoa powder. Microwave in 30 second intervals, stirring well each time, until the mixture is completely melted and smooth. This should take about 1 minute and 30 seconds total.
- Add wet ingredients: Stir in the vanilla bean paste and granulated sugar into the melted chocolate mixture, then mix in the soy milk until the batter is smooth and well combined.
- Combine dry ingredients: Add the all-purpose flour, baking powder, and salt to the chocolate mixture. Stir gently with a wooden spoon until just combined. If desired, fold in the additional chocolate chips for extra chocolate bursts.
- Transfer batter to pan: Pour the brownie batter evenly into the prepared baking pan, spreading it out smoothly.
- Prepare peanut butter swirl: In a separate medium bowl, mix together the creamy peanut butter, melted vegan butter, powdered sugar, and vanilla bean paste until smooth and creamy.
- Swirl peanut butter topping: Drop spoonfuls of the peanut butter mixture on top of the brownie batter. Use a butter knife to create swirls by gently dragging it through the peanut butter and brownie batter.
- Bake and cool: Bake the brownies for 35 to 40 minutes until set but still fudgy in the middle. For best texture, allow the brownies to cool completely before cutting, optionally refrigerate to speed cooling. Freshly cut brownies will be gooey; cooled ones will slice perfectly.
Notes
- You can substitute soy milk with any other plant-based milk like almond or oat milk if preferred.
- If you want a nut-free version, substitute peanut butter with sunflower seed butter.
- Make sure not to overbake to keep the brownies fudgy and moist inside.
- Use Dutch processed cocoa powder for a deeper chocolate flavor and better texture.
- Letting the brownies cool completely or refrigerate helps achieve cleaner slices.
- Optional extra chocolate chips add more texture and richness.
