For the Brownies
- 2 tbsp ground flaxseed
- 6 tbsp warm water
- 1 cup white sugar
- ⅓ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- ½ cup melted vegan butter
- 1 tsp vanilla bean paste
For the Glaze
- ¼ cup vegan chocolate chips
- 2 tbsp nondairy milk (more or less as needed)
- Rainbow chip sprinkles (for topping)
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the brownies.
- Make flax egg: In a small bowl, combine the ground flaxseed with the warm water and stir well. Set it aside to thicken, creating a flax egg that acts as a vegan binder.
- Mix dry ingredients: In a large mixing bowl, whisk together sugar, cocoa powder, all-purpose flour, salt, and baking powder until evenly combined.
- Add wet ingredients: Pour the melted vegan butter, vanilla bean paste, and thickened flaxseed mixture into the dry ingredients. Stir until a thick brownie batter forms.
- Prepare baking dish: Line an 8×8 inch baking pan with parchment paper, which helps prevent sticking and makes removal easier.
- Bake the brownies: Pour the batter into the prepared pan and smooth out the surface with a spatula. Bake for 35 minutes or until the top looks dry and a toothpick inserted in the center comes out with just a few moist crumbs.
- Cool the brownies: Allow the baked brownies to cool completely to room temperature before applying the glaze.
- Make the glaze: In a microwave-safe bowl, combine vegan chocolate chips and nondairy milk. Heat in 15-second intervals, stirring between each, until the mixture becomes smooth and creamy. Add more milk if it is too thick to pour easily.
- Glaze and decorate: Pour the chocolate glaze evenly over the cooled brownies, then sprinkle colorful rainbow chip sprinkles on top.
- Set the glaze: Place the glazed brownies in the refrigerator to allow the topping to solidify. Once set, store the brownies at room temperature or refrigerate for a fudgier texture.

- Be sure to line the baking dish with parchment paper as these brownies tend to stick.
- The flaxseed mixture needs time to thicken and behaves as an egg substitute.
