  • 1 teaspoon dijon mustard (preferably grainy)
  • 1-3 tablespoons warm water, to thin out dressing as desired
  • Freshly ground salt and black pepper, to taste

Instructions

  1. Combine Ingredients: In a small bowl, add tahini, fresh lemon juice, grated garlic, diced capers, caper brine, dijon mustard, and warm water.
  2. Mix Thoroughly: Whisk all ingredients together until smooth and creamy, adjusting the amount of warm water to reach your preferred dressing consistency.
  3. Season to Taste: Add freshly ground black pepper and a pinch of salt if needed, mixing again to combine.
  4. Serve or Store: Use immediately as a dressing for salads or refrigerate in an airtight container for up to 5 days. Stir before using.
