Avocado Spread
- 1 medium avocado
- 2 tablespoons mayonnaise or sour cream
- 1 tablespoon fresh lime juice

Wrap Filling
- 4 tortillas or wraps (10- to 12-inches)
- 8 ounces shaved deli turkey
- 4 cups torn or chopped fresh spinach
- 1 cup shredded carrots or broccoli slaw mix
- 1 English cucumber, cut into thin matchstick slices
- 1 cup halved cherry or grape tomatoes
- 2 bell peppers (orange, red, yellow, or green), cut into thin slices
- 1/2 cup finely shredded Parmesan cheese (optional)
- Oil and vinegar (optional; balsamic recommended)
- Salt and pepper, to taste
Instructions
- Prepare the avocado spread: In a small bowl, mash the medium avocado together with 2 tablespoons of mayonnaise or sour cream, 1 tablespoon of fresh lime juice, and a pinch of salt and pepper until smooth and well combined.
- Spread the avocado mixture: Lay out the tortillas and spread a couple of tablespoons of the avocado spread evenly over each wrap, leaving a thin border around the edges to prevent overflow when rolling.
- Layer the fillings: On one half of each wrap, layer 2 ounces of shaved deli turkey, about 1 cup of torn fresh spinach, 1/4 cup shredded carrots or broccoli slaw, thin slices of cucumber, halved cherry tomatoes, bell pepper slices, and sprinkle with finely shredded Parmesan cheese if using.
- Season and dress: Lightly sprinkle salt and pepper over the layered ingredients. Optionally, drizzle a small amount of olive oil and your favorite vinegar, such as balsamic, over the veggies to enhance flavor.
- Roll the wraps: Starting at the loaded edge, tightly roll the wrap towards the opposite end. The creamy avocado spread will help seal the wrap closed for easy handling.
- Serve or store: Cut each wrap in half diagonally. Serve immediately for best flavor and texture, or refrigerate well wrapped for up to an hour before serving. Note that longer refrigeration may cause the avocado spread to darken slightly without affecting taste.
