Ingredients
Wet Ingredients
- 1 cup vanilla protein shake (e.g., Fairlife 26g Protein Shake)
- ⅓ cup plain nonfat Greek yogurt (e.g., Oikos Pro Plain – 25 grams protein)
- 1 tablespoon sweetened condensed milk
- 1 tablespoon evaporated light milk (or 2% milk)
- ½ teaspoon vanilla bean paste
Dry Ingredients
- ½ cup protein oats (e.g., Bob’s Red Mill or quick rolled oats)
- 1 tablespoon basil seeds (or chia seeds)
- ½ teaspoon ground cinnamon
- Pinch of cinnamon
- ½ teaspoon coconut flakes
Toppings
- 2 tablespoons light whipped topping
- ⅓ cup sliced strawberries
- Monk fruit sweetener (optional, to taste)
Instructions
- Combine Wet Ingredients: In a mason jar or airtight container, mix together the vanilla protein shake, plain nonfat Greek yogurt, sweetened condensed milk, evaporated milk, and vanilla bean paste until smooth and fully incorporated.
- Add Dry Ingredients: Stir in the basil seeds (or chia seeds), protein oats, and ground cinnamon. Mix well to combine all ingredients evenly. If additional sweetness is desired, add more sweetened condensed milk or monk fruit sweetener to taste.
- Refrigerate Overnight: Cover the container tightly and place it in the refrigerator. Let it sit for at least 6 hours, preferably overnight, to allow the oats and seeds to absorb the liquids, thicken, and create a creamy consistency.
- Serve and Garnish: After chilling, divide the overnight oats evenly into two serving dishes. Top each with light whipped topping, sliced strawberries, a pinch of cinnamon, and coconut flakes for extra flavor and texture.
Notes
- Basil seeds can be substituted with chia seeds if preferred or unavailable.
- For a dairy-free version, substitute evaporated milk and yogurt with plant-based alternatives.
- Adjust sweetness according to preference by varying the amount of sweetened condensed milk or using monk fruit sweetener.
