- 1 pound lean ground beef
- 1/2 medium onion, chopped

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and position the oven rack in the top third of the oven to ensure even browning of the tater tots.
- Cook Beef and Onions: In a skillet over medium-high heat, add the ground beef and chopped onions. Cook for about 7-8 minutes, stirring occasionally and breaking up the beef with a spoon, until the beef is browned and onions have softened. Drain excess fat if there is a lot.
- Add Seasonings and Garlic: Stir in minced garlic, soy sauce, and Italian seasoning. Cook for an additional minute to allow the flavors to combine.
- Mix Creamy Ingredients: Reduce the heat to medium and add the sour cream, condensed cream of mushroom soup, drained corn, and half a cup of shredded cheddar. Stir thoroughly and let the mixture heat through for 1-2 minutes.
- Assemble Casserole: Transfer the beef mixture evenly into a 9×13 inch casserole dish. If using a large oven-safe skillet, you can assemble directly in it.
- Add Cheese and Tater Tots: Sprinkle the remaining 1.5 cups of cheddar cheese over the beef mixture. Then evenly top with the frozen tater tots, covering the cheese fully.
- Bake: Place the casserole in the preheated oven and bake uncovered for 45 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.
- Serve: Remove from oven and optionally garnish with chopped scallions. Season with salt and pepper to taste before serving.
Notes
- For a crispier tater tot topping, you may broil the casserole for 2-3 minutes after baking, watching closely to prevent burning.
- Using lean ground beef reduces excess fat and makes the casserole less greasy.
- You can customize by adding vegetables like bell peppers or mushrooms for added nutrition and flavor.
