Instructions
- Prepare the shrimp seasoning: In a medium bowl, combine 1 tablespoon of medium hot sauce, 1 tablespoon olive oil, 1 tablespoon fresh lemon juice, 1 teaspoon grated fresh garlic, 1 teaspoon ground cumin, 1 teaspoon dried oregano, ½ teaspoon smoked paprika, and ¼ teaspoon kosher salt. Mix well to create the marinade.
- Marinate the shrimp: Add the peeled and deveined shrimp to the bowl with the marinade, ensuring they are fully coated. Allow the shrimp to marinate in the refrigerator for up to 4 hours to develop flavor.
- Preheat the oven: Set your oven to 400°F (200°C) to get it ready for baking the vegetables and shrimp.
- Prepare and bake the vegetables: On a 9×13-inch rimmed sheet pan, toss the chopped bell peppers, halved cherry tomatoes, and frozen corn kernels with 1 tablespoon olive oil and ½ teaspoon kosher salt. Spread them evenly and bake for 20 minutes.
- Mix green onions with shrimp: While the vegetables cook, chop the green onions and mix them into the marinated shrimp.
- Add shrimp to vegetables and bake: After the initial 20 minutes, arrange the shrimp and green onion mixture over the roasted vegetables on the baking sheet, pouring any remaining marinade evenly on top. Return to the oven and bake for another 10 minutes until the shrimp turn opaque and are cooked through.
- Finish the dish: Remove the baking sheet from the oven, then sprinkle the shredded Monterey Jack cheese and chopped fresh cilantro over the hot shrimp and vegetables. Optionally, drizzle with Spicy Green Sauce for an extra kick before serving.

- Marinate the shrimp for at least 15 minutes, though up to 4 hours is preferable for deeper flavor.
- You can substitute Monterey Jack cheese with feta for a tangier taste.
- If you prefer less spice, reduce or omit the medium hot sauce in the marinade.
