  • 1/4 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the sweet potato stacks.
  2. Prepare Muffin Pan: Lightly grease a 12-space regular-sized muffin pan with nonstick cooking spray or brush with cooking oil to prevent sticking.
  3. Melt Butter and Add Garlic: Melt the unsalted butter using the microwave or stovetop, then whisk in the grated garlic. Set this mixture aside to cool slightly.
  4. Slice Sweet Potatoes: Using a mandolin or a very sharp knife, thinly slice the sweet potatoes to about 1/16-inch thickness. Peeling is optional.
  5. Toss Sweet Potato Slices: Place the sliced sweet potatoes into a large mixing bowl and pour the cooled garlic butter over them. Add fresh thyme leaves, kosher salt, and black pepper.
  6. Combine Ingredients: Gently stir so that the butter and seasonings evenly coat the slices, ensuring some butter is between most slices.
  7. Stack in Muffin Pan: Carefully stack the sweet potato slices into each muffin tin section, filling them to the top or slightly higher to form stacks.
  8. Bake Stacks: Bake uncovered for 30 to 40 minutes until the tops are golden brown and the sweet potatoes are very tender. Baking time varies based on slice thickness.
  9. Cool and Adjust: Remove the pan from the oven; if any stacks have toppled, gently nudge them upright with a spoon. Allow the stacks to cool in the pan for 5 minutes before removing.
  10. Serve: Serve the sweet potato stacks warm as a flavorful side dish.

  • Sweet potatoes can be peeled if desired, but leaving the skin on adds texture and nutrients.
