Instructions

  1. Heat the oil and sauté aromatics: Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the chopped red onion and garlic and fry until translucent and fragrant, about 3-5 minutes.
  2. Prepare lentils: While the onion and garlic cook, rinse the red lentils thoroughly in a sieve under cold running water to remove dust and starch.
  3. Add main ingredients and simmer: Add the diced sweet potatoes, rinsed lentils, 1 ½ cups vegetable broth, spices (yellow curry powder, ground coriander, cumin, garam masala), chopped tomatoes, and a pinch of salt to the saucepan. Stir to combine.
  4. Bring to boil and simmer with lid: Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let it simmer gently for 10-12 minutes until sweet potatoes and lentils start to soften.
