Ingredients
Marinade
- 1/4 cup pure maple syrup
- 1/4 cup soy sauce
- 2 garlic cloves, minced
- 1 tablespoon minced fresh ginger
- 1 teaspoon chili garlic sauce
Shrimp
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon cornstarch
Cooking
- 2 teaspoons olive or avocado oil
- 2 green onions, thinly sliced
Instructions
- Prepare the marinade: Whisk together the pure maple syrup, soy sauce, minced garlic, fresh ginger, and chili garlic sauce until well combined. Set aside.
- Portion the marinade: Pour 3 tablespoons of the marinade into a ziplock bag and transfer the remaining marinade to a small saucepan; set the saucepan aside for later use.
- Marinate the shrimp: Add the shrimp to the ziplock bag with the marinade, seal the bag, and gently massage it to coat the shrimp evenly. Refrigerate for at least 30 minutes, or up to 4 hours, to allow the shrimp to absorb the flavors.
- Thicken the sauce: Whisk the cornstarch into the marinade in the saucepan. Place the saucepan over medium heat and bring the sauce to a simmer. Cook while stirring occasionally until the sauce thickens slightly, about 2 to 3 minutes. Remove from heat.
- Cook the shrimp: Heat a large ceramic, nonstick, or cast-iron skillet over medium-high heat. Add the oil and transfer the marinated shrimp to the skillet, discarding the marinade from the bag. Cook the shrimp for 1 minute on one side.
- Add sauce and finish cooking: Flip the shrimp and pour the thickened sauce over them. Continue cooking the shrimp for another 1 to 2 minutes until they are just cooked through and the sauce is well coated.
- Add green onions and serve: Stir the thinly sliced green onions into the shrimp and sauce mixture. Serve immediately over cooked rice or quinoa for a complete meal.

- Use gluten-free tamari or coconut aminos instead of soy sauce to make this recipe gluten-free.
- Adjust chili garlic sauce quantity based on your preferred spice level.
- Large shrimp are preferred for quick cooking and a tender texture; peeled and deveined.
