Instructions

  1. Prepare the topping mixture. In a bowl, combine the old fashioned oats, brown sugar, flour, cinnamon, and melted salted butter. Mix just until the mixture becomes crumbly and holds together slightly.
  2. Layer the crisp. Spread half of the crumbly topping evenly into the bottom of a greased 9×9 inch baking pan to create the crust layer.
  3. Add the fruit. Place the peeled and sliced peaches along with the sliced strawberries evenly over the crust layer in the pan.
  4. Make the syrup. In a small saucepan over medium-high heat, combine brown sugar, cornstarch, salt, and water. Stir constantly and cook just until the mixture thickens, which will take only a few minutes. Keep a close eye to avoid burning.
  5. Add vanilla and pour syrup. Remove the syrup from heat and stir in the vanilla bean paste. Pour this warm syrup evenly over the fruit in the baking pan.
