Ingredients

Pink Layer

  • 2½ cups strawberries (fresh or frozen)
  • 5 tbsp zero sugar honey substitute (adjust to taste)
  • 1 tsp lemon juice
  • Zest of 1 lemon (optional)
  • 1 cup Greek yogurt

White Layer

  • 2 cups Greek yogurt
  • 3 tbsp zero sugar honey substitute (adjust to taste)
  • 2 tsp lemon juice

Instructions

  1. Blend the pink layer: Blend strawberries, lemon juice, lemon zest (if using), honey substitute, and 1 cup of Greek yogurt until the mixture is smooth and creamy. Taste the blend and adjust the sweetness by adding more honey substitute if desired.
  2. Mix the white layer: In a separate bowl, stir together the remaining 2 cups of Greek yogurt, lemon juice, and honey substitute until the mixture is smooth and well combined.
  3. Layer and swirl: Spoon alternating layers of the pink and white mixtures into each popsicle mold. Use a skewer or a thin knife to gently swirl the mixtures together to create a marbled effect.
  4. Freeze: Insert popsicle sticks into the molds and freeze the popsicles for at least 6 hours or until completely solid.
  5. Unmold & serve: To release the popsicles, run the molds under warm water for a few seconds, then gently pull out the popsicles and serve immediately.

Notes

  • Use fresh or frozen strawberries according to availability.
  • Adjust the amount of zero sugar honey substitute to your preferred sweetness.
  • Lemon zest is optional but adds extra brightness to the flavor.
