  • 12-16 oz. strawberries (fresh and roughly chopped, or frozen and thawed, or other fruit as preferred)
  • 1 cup milk (any kind, dairy or plant-based; oat milk recommended)
  • 1 cup yogurt (any kind, dairy or plant-based; whole milk plain yogurt recommended)
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup (or honey as an alternative)
  • 1/2 cup chia seeds

For Serving (Optional)

  • Fresh chopped strawberries or other fruit
  • Whipped cream

Instructions

  1. Combine ingredients: In a medium bowl, add 12-16 oz. of strawberries, 1 cup of milk, 1 cup of yogurt, 1 teaspoon of vanilla extract, and 1/4 cup of maple syrup.
  2. Blend mixture: Use an immersion blender to purée the mixture until smooth. Alternatively, use a standing blender then transfer the puréed mixture back to the bowl.
  3. Add chia seeds: Stir in 1/2 cup of chia seeds thoroughly to ensure they are evenly distributed throughout the pudding base.
  4. Refrigerate: Cover the bowl and refrigerate the mixture for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken the mixture into a pudding-like consistency.
  5. Serve: Spoon the pudding into serving bowls and garnish with fresh chopped strawberries or other fruit and/or whipped cream if desired.

Notes

  • Use fresh or previously frozen strawberries according to availability; thaw frozen strawberries before blending.
  • You can swap maple syrup with honey for natural sweetness.
