Ingredients
Dry Ingredients
- 2 cups all-purpose flour (spooned and leveled)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 1 cup granulated sugar
- 1/3 cup canola oil (vegetable oil, or other flavorless oil)
- 1/3 cup whole milk
- 2 large eggs (at room temperature)
- 2 teaspoons vanilla bean paste
Fruit
- 1 pound fresh strawberries (stems removed and chopped small)
Strawberry Glaze
- 1 cup confectioners’ sugar
- 2 teaspoons milk
- 1 strawberry (mashed)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (177 degrees C) and prepare a 9”x5” loaf pan by lining it with parchment paper, making sure to leave an overhang on the sides for easy removal of the bread.
- Whisk Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking soda, baking powder, and salt. Whisk everything together to ensure even distribution of the leavening agents and salt.
- Add Wet Ingredients: Add the granulated sugar, canola oil, whole milk, eggs, and vanilla bean paste to the dry ingredients. Whisk gently just until all ingredients are combined. Take care not to overmix, as this can lead to a dense bread texture.
- Add Strawberries: Fold in the chopped fresh strawberries evenly into the batter, distributing the fruit without overworking the mix.
- Pour Batter: Transfer the batter into the prepared loaf pan, spreading it evenly with a spatula.
- Bake Bread: Place the loaf pan on the center rack of the preheated oven and bake for 55 to 60 minutes. The bread is done when a toothpick inserted in the center comes out clean or with just a few moist crumbs.
- Cool Bread: Remove the bread from the oven and set the pan on a wire cooling rack for 15 minutes. Then, lift the bread out using the parchment paper overhang and allow it to cool completely on the rack, approximately 1 hour.
- Whisk Glaze: In a small bowl, whisk together the confectioners’ sugar, milk, and the mashed strawberry until smooth and well combined to form a glaze.
- Add Glaze: Drizzle the strawberry glaze evenly over the fully cooled bread to enhance flavor and appearance.
Notes
- Make sure not to overmix the batter to keep the bread light and tender.
- Use fresh, ripe strawberries for the best flavor and moisture.
- Allow the bread to cool completely before glazing to prevent the glaze from melting off.
- The glaze can be adjusted in thickness by adding more or less milk.
- This bread can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
