Ingredients
Sauce
- 3 tbsp low sodium soy sauce or tamari
- 2 tbsp tahini
- 1 tbsp sriracha
- 1 tbsp chili garlic sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
Main Ingredients
- 6 oz soba noodles (approx. 2 bundles)
- 6 oz baby bok choy (approx. 4 bundles)
- 3 cloves garlic, diced
- 3 green onions, diced, whites and greens separated
- 1 cup bean sprouts
- 1/4 cup roasted peanuts, chopped
Optional Garnishes
- cilantro, chopped
- red pepper flakes
Instructions
- Prepare the sauce: Combine 3 tbsp low sodium soy sauce or tamari, 2 tbsp tahini, 1 tbsp sriracha, 1 tbsp chili garlic sauce, 1 tbsp rice vinegar, and 1 tbsp sesame oil in a bowl. Stir well until fully combined and set aside.
- Cook the soba noodles: Bring a pot of water to a boil over high heat. Add 6 oz soba noodles and cook according to the package instructions (usually around 4-5 minutes). Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and remove excess starch. Set aside.
- Sauté the bok choy: Heat a drizzle of sesame oil in a pan over medium-high heat. Add 6 oz baby bok choy along with a dash of soy sauce and a pinch of red pepper flakes if desired. Cook for several minutes, flipping often, until the bok choy begins to wilt and soften. Remove the bok choy from the pan and set aside.
- Sauté aromatics: Place the pan back on the stove over medium heat and add a little more sesame oil. Add the diced garlic and the white parts of the green onions and sauté for about 30 seconds until fragrant but not browned.
- Add sauce and sprouts: Pour half of the prepared sauce into the pan followed by 1 cup bean sprouts. Heat and stir for about 30 seconds to combine and warm the bean sprouts.
- Toss noodles and finish sauce: Lower the heat and add the cooked soba noodles into the pan along with the remaining sauce. Toss everything together thoroughly ensuring the noodles are evenly coated with sauce.
- Reintroduce bok choy and serve: Add the sautéed bok choy back into the pan and stir gently to heat through. Remove from heat and serve immediately, garnished with the green parts of the chopped green onions, chopped cilantro if using, chopped roasted peanuts, and additional red pepper flakes for spice if desired.
Notes
- Use low sodium soy sauce or tamari to control saltiness.
- Rinsing soba noodles after cooking prevents clumping and removes excess starch.
- Adjust chili garlic sauce and sriracha quantities to customize heat level.
- For extra protein, add tofu or cooked chicken if not vegetarian.
