Ingredients
Ingredients
- 1 teaspoon olive oil
- 1/4 cup chopped white onion
- 1 cup quinoa
- 1/2 cup chunky salsa
- 2 cups vegetable broth
Instructions
- Heat oil and sauté onions: Heat the olive oil in a small saucepan over medium heat. Add the chopped white onion and cook, stirring occasionally, until the onions become tender and golden brown.
- Add quinoa, salsa, and broth: Stir in the quinoa, chunky salsa, and vegetable broth. Mix everything together to combine evenly.
- Simmer the quinoa: Bring the mixture to a boil, then cover the saucepan with a lid, reduce the heat to low, and let it simmer for 20 minutes or until the quinoa has absorbed the liquid and is tender.
- Fluff and rest: Remove the saucepan from the heat. Fluff the quinoa gently with a fork and let it sit covered for 5 minutes. Serve warm.
Notes
- Rinse quinoa thoroughly before cooking to remove its natural bitterness.
- Use your favorite salsa variety for different flavor profiles.
- Can be served as a side dish or a main course for a light meal.
- For extra protein, add black beans or grilled chicken.
- Vegetable broth can be substituted with water but will reduce flavor.
