- 1/2 cup (110g) unsalted butter, room temperature (vegan or regular)
- 2 tbsp unsweetened apple sauce
- 1 tsp vanilla bean paste

- 1/4 cup (55g) granulated sugar

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper to prepare for baking the cookies.
- Mix Wet Ingredients: In a large mixing bowl, use a hand or stand mixer to combine the peanut butter, softened butter, dark brown sugar, and granulated sugar until the mixture is smooth and creamy. Then mix in the unsweetened apple sauce and vanilla bean paste thoroughly.
- Add Dry Ingredients: Add the all-purpose flour, rolled oats, baking soda, baking powder, and salt to the wet mixture. Mix everything together until well combined but do not overmix.
- Fold in Chocolate Chips: Using a rubber spatula, gently fold in the mini semisweet chocolate chips until evenly distributed throughout the dough.
- Portion Dough: Using a large 2 oz cookie scoop or a 1/4 measuring cup, scoop the cookie dough onto one of the prepared baking sheets, spacing the dough balls about 3 inches apart to allow for spreading. You should fit about 5 cookies per baking sheet.
- Bake Cookies: Place the baking sheet in the preheated oven and bake the cookies for 12-15 minutes, or until the edges are a very light golden brown. As soon as the first batch finishes, scoop dough onto the second baking sheet and place it in the oven.
- Add Toppings and Cool: When the cookies are still warm and on the baking sheet, sprinkle extra chocolate chips and a light sprinkle of flaky sea salt on top. Let the cookies rest on the baking sheet for about 5 minutes to set before transferring them to a cooling rack.
- Serve: Enjoy the cookies warm or at room temperature. They remain soft and tender even after cooling.
