These Soft Chocolate Chip Cookie Bars offer a perfectly chewy and tender texture packed with melty chocolate chips. Easy to prepare and baked in just 27 minutes, they are an ideal treat for any chocolate lover, delivering classic cookie bar flavor in a convenient square format.

  • Total Time: 27 minutes
  • Yield: 16 servings

Ingredients

Wet Ingredients

  • 1/2 cup butter (melted)
  • 2 tbsp granulated sugar
  • 1/2 cup brown sugar
  • 1 egg (room temperature)
  • 1/2 tsp vanilla flavoring

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, ensuring there is some overhang for easy removal, then set it aside.
  2. Mix Wet Ingredients: Melt the butter in a microwave-safe bowl and allow it to cool for 5 to 10 minutes at room temperature. Once cooled, add the brown sugar and granulated sugar to the melted butter and mix until fully combined. Add the room temperature egg and vanilla flavoring, then stir again until the mixture is smooth and homogenous.
  3. Add Dry Ingredients and Chocolate Chips: To the wet mixture, add the flour, baking soda, salt, and chocolate chips. Gently stir just until the flour mixture disappears and the batter is evenly combined without overmixing.
  4. Spread Batter and Bake: Carefully spread the batter evenly in the prepared baking pan. Place in the oven and bake for 17 minutes, or until the edges are set and the center is slightly soft.
  5. Garnish and Cool: Remove the pan from the oven and immediately sprinkle a few extra chocolate chips on top for an appealing look. Allow the cookie bars to cool completely in the pan before lifting them out using the parchment overhang and slicing into 16 squares.

Notes

  • For softer bars, do not overbake; the center should still be slightly soft when removed from the oven.
  • Using room temperature egg helps create a smooth, well-incorporated batter.
  • Line the pan with parchment paper to easily remove the bars without breaking.
  • You can substitute chocolate chips with chopped chocolate or other mix-ins like nuts or dried fruit if preferred.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
