Seasoned Flour Coating
- 1/2 cup flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 tablespoon paprika
- 1/2 teaspoon cayenne pepper
Cooking Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium-to-large onion (sliced)
- 1 cup chicken broth
- 1 teaspoon Worcestershire sauce
- 1/4 cup heavy/whipping cream
Instructions
- Prepare Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner cutlets. Season each piece with salt and pepper on both sides ensuring even seasoning.
- Mix Seasoned Flour: In a bowl, combine flour, garlic powder, onion powder, paprika, and cayenne pepper. Stir well. Then measure out 2 tablespoons of this mix into a small bowl for thickening the gravy later.
- Heat Oil: Add olive oil to a skillet and heat over medium-high until shimmering, preparing for frying the chicken.
- Coat Chicken: Transfer the remaining seasoned flour mix to a plate. Dredge each chicken piece thoroughly in the flour coating, shaking off any excess.
- Cook Chicken: Place coated chicken in the hot skillet. Fry for 5 minutes on each side until golden but not completely cooked through. Remove chicken from skillet and set aside on a plate.
- Sauté Onions: Lower heat to medium-low and add butter to the skillet. Once melted, add sliced onions and cook slowly for 15-20 minutes, stirring every couple of minutes, until onions are soft and golden brown. Adjust heat to prevent burning.
- Add Flour to Pan: Sprinkle the reserved 2 tablespoons of seasoned flour over the onions. Stir continuously and cook for about 1 minute to remove raw flour taste.
- Create Gravy: Pour in chicken broth and Worcestershire sauce, stirring constantly to dissolve the flour and scrape up browned bits from the pan for flavor. Then stir in the heavy cream until the sauce is smooth.
- Simmer Chicken in Gravy: Return the chicken pieces to the skillet, spooning sauce over them. Cook for another 5-7 minutes, or until chicken reaches an internal temperature of 165°F and the gravy thickens. Increase heat if necessary to maintain a gentle simmer.
- Final Seasoning and Serve: Taste the gravy and adjust seasoning with salt and pepper as needed. Serve immediately for best flavor and texture.
