Ingredients
Chicken and Seasoning
- 2 pounds boneless skinless chicken breasts
- 1 package taco seasoning (about 1 oz)
- 1 package ranch dressing powder (about 1 oz)
- 1 cup chicken broth
For Serving
- Tortillas (soft flour or corn, as preferred)
- 1 avocado, sliced or diced
- 1 cup diced tomatoes
- ½ cup fresh cilantro leaves, chopped
- Ranch dressing, for drizzling
Instructions
- Add the Chicken to the Slow Cooker: Place 2 pounds of boneless skinless chicken breasts into the bottom of your slow cooker, arranging them in an even layer for consistent cooking.
- Season the Chicken: Sprinkle 1 package of taco seasoning and 1 package of ranch dressing powder evenly over the chicken breasts, ensuring all pieces are well coated with the flavorful spices.
- Add Chicken Broth: Pour 1 cup of chicken broth over the seasoned chicken to provide moisture and help infuse the flavors during cooking.
- Cook the Chicken: Cover the slow cooker with its lid and set it to cook on low for 6 hours or on high for 4 hours. This slow cooking process will make the chicken tender and easy to shred.
- Shred the Chicken: Once cooked, remove the chicken breasts and shred them using two forks until the pieces are fine and manageable to serve.
- Assemble the Tacos: Warm the tortillas and fill each with a generous serving of shredded chicken. Top with sliced avocado, diced tomatoes, chopped cilantro, and a drizzle of ranch dressing as desired for extra flavor and creaminess.
Notes
- For a spicier kick, add chopped jalapeños or a dash of hot sauce to the chicken before cooking.
- Can be made ahead and refrigerated; the flavors intensify after resting overnight.
- Use gluten-free tortillas to make this recipe suitable for gluten-free diets.
- Leftover shredded chicken works great in salads, quesadillas, or burrito bowls.
- To save time in the morning, prep all ingredients the night before and start the slow cooker when ready.
