Ingredients
Chicken
- 8 bone-in, skin-on chicken thighs
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried rosemary
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 1 cup freshly grated Parmesan
- 2 tablespoons chopped fresh parsley leaves
Potatoes and Seasoning
- 2 pounds baby red potatoes, quartered
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Season the chicken. In a bowl, season the bone-in, skin-on chicken thighs evenly with dried basil, dried oregano, dried rosemary, kosher salt, and freshly ground black pepper to taste.
- Sear the chicken. Melt the unsalted butter in a large skillet over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 2 to 3 minutes per side. Drain any excess fat from the skillet and set the chicken aside.
- Prepare the potatoes. Place the quartered baby red potatoes into a 6-quart slow cooker. Stir in olive oil, minced garlic, dried thyme, and season with salt and pepper to taste.
- Combine chicken and potatoes. Arrange the seared chicken thighs evenly over the potatoes in the slow cooker.
- Cook slowly. Cover the slow cooker and cook on low heat for 7 to 8 hours or on high for 3 to 4 hours, until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- Finish and serve. Serve the chicken and potatoes immediately, sprinkled generously with freshly grated Parmesan cheese and garnished with chopped fresh parsley leaves.
Notes
- For best results, make sure to sear the chicken thoroughly to lock in flavors and develop a golden crust before slow cooking.
- You can substitute baby red potatoes with Yukon gold or fingerling potatoes if preferred.
- If you prefer crispier skin, briefly broil the cooked chicken thighs in the oven before serving.
- Adjust seasoning to taste, especially salt and pepper, depending on dietary preferences.
- Leftovers keep well refrigerated for up to 3 days and can be reheated gently in a microwave or oven.
