Ingredients
Orzo
- 1 ½ cups orzo
Shrimp and Vegetables
- 1 pound large shrimp, shelled with tail-on
- 2 cups asparagus, cut into 1-inch pieces
- 4 teaspoons garlic, minced
- 6 tablespoons butter (can substitute plant-based)
- Kosher salt and ground black pepper, to taste
Liquids and Flavorings
- ¼ cup chicken broth
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon kosher salt
- ½ cup reserved pasta water
For Serving
- Freshly shredded parmesan cheese
Instructions
- Cook Orzo: Bring a large pot of water to a boil. Add 1 ½ cups of orzo and cook according to package directions until al dente. Before draining, reserve ½ cup of the pasta water. Drain the orzo and set it aside.
- Cook Shrimp & Asparagus: Heat a large cast iron skillet over medium-high heat. Add 6 tablespoons of butter and melt completely. Sauté 4 teaspoons garlic for 30 seconds to 1 minute until fragrant. Add 1 pound of large shrimp and 2 cups of asparagus pieces. Season with kosher salt and ground black pepper. Cook for 3-5 minutes, stirring occasionally, until shrimp are fully cooked and asparagus is tender-crisp.
- Combine Ingredients: Into the hot skillet with shrimp and asparagus, pour ¼ cup chicken broth, 1 tablespoon lemon juice, and 1 teaspoon lemon zest. Add the cooked orzo along with ½ teaspoon kosher salt. Stir well to combine all ingredients. Taste and adjust seasoning; add additional lemon juice or salt if desired. Use reserved pasta water as needed to loosen the sauce and achieve desired consistency.
- Serve: Serve immediately while hot, garnished generously with freshly shredded parmesan cheese for a rich, savory finish.
Notes
- Using tail-on shrimp adds flavor and visual appeal, but you may remove tails if preferred.
- Reserve pasta water to adjust sauce consistency; it helps thicken and bind the sauce with the starch from the orzo.
- Plant-based butter can be substituted to make the dish dairy-free, but keep the parmesan or swap with a vegan alternative.
- Adjust seasoning and lemon amount to your taste preference for brightness and balance.
- Cook asparagus until just tender to retain texture and color.
