Ingredients
Protein and Vegetables
- 4 salmon fillets
- 1 pound asparagus (ends trimmed)
- 2 pounds baby red or gold potatoes (quartered)
Seasonings and Sauce
- 3 tablespoons olive oil
- salt and pepper to taste
- 2 teaspoons Italian herb blend
- 1 teaspoon garlic powder
- 2 tablespoons butter (melted)
- 2 tablespoons honey
- 1 teaspoon Dijon mustard
- ½ teaspoon Italian herb blend
- ½ lemon (thinly sliced)
Instructions
- Preheat and prepare potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the quartered baby potatoes with 2 tablespoons of olive oil, salt, pepper, garlic powder, and 2 teaspoons of Italian herb blend. Spread the potatoes evenly on a large sheet pan and bake for 10 minutes to start cooking.
- Add salmon and asparagus: After the initial potato roasting, arrange the salmon fillets and trimmed asparagus on the same sheet pan alongside the partially cooked potatoes for a one-pan meal.
- Prepare and apply glaze: In a small bowl, whisk together the melted butter, honey, Dijon mustard, and the remaining ½ teaspoon of Italian herb blend. Brush this flavorful mixture generously onto each salmon fillet.
- Season asparagus and add lemon: Drizzle the asparagus with the remaining 1 tablespoon of olive oil and season with salt and pepper. Place thin lemon slices between the asparagus spears to add brightness and aroma during roasting.
- Final baking: Return the sheet pan to the oven and bake for an additional 15 minutes, or until the potatoes and asparagus are tender when pierced with a fork and the salmon is fully cooked and flaky.
- Serve: Remove from oven and immediately serve the salmon, asparagus, and potatoes hot for a delicious and balanced meal.
Notes
- You can substitute the Italian herb blend with your favorite dried herbs such as oregano, basil, rosemary, and thyme.
- For extra crispiness, consider broiling the salmon for 2-3 minutes at the end of baking.
- Make sure to trim the asparagus ends before cooking to avoid woody texture.
- This recipe can be doubled for larger gatherings, but use two sheet pans to avoid overcrowding and ensure even cooking.
