Ingredients
Dry Ingredients
- 2 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 tablespoons baking powder (aluminum free)
- ½ teaspoon salt
Wet Ingredients
- 2 cups whole milk
- 2 eggs (room temperature)
- 4 tablespoons butter (melted)
- 1 teaspoon vanilla bean paste
Toppings
- Chocolate chips
- Blueberries
- Strawberries
- Bananas
Additional
- Cooking spray (for greasing the pan)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 425°F (220°C). Generously grease a 13×18 inch baking sheet with cooking spray to prevent sticking and ensure easy removal of the pancakes.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
- Add Wet Ingredients: Create a well in the center of the dry mix. Slowly whisk in the whole milk, room temperature eggs, melted butter, and vanilla bean paste. Stir until the batter is just combined; a few lumps are okay to keep the pancakes fluffy.
- Pour Batter and Add Toppings: Pour the pancake batter onto the prepared baking sheet and spread it evenly to cover the surface. Divide the batter visually into four quadrants and sprinkle chocolate chips over one, blueberries over another, strawberries over the third, and bananas over the last quadrant.
- Bake the Pancakes: Place the baking sheet in the preheated oven and bake for 15-17 minutes, or until the pancakes are golden brown and cooked through.
- Serve: Remove from the oven, cut into 12 square portions, and serve immediately. Optionally, drizzle with maple syrup or your favorite toppings for extra flavor.
Notes
- Use room temperature eggs to create a smoother batter and more even cooking.
- The fruit toppings can be customized according to preference or availability.
- Aluminum-free baking powder is recommended to avoid any metallic taste.
- Serve immediately for best texture, as reheated pancakes might lose some fluffiness.
- For a dairy-free version, substitute whole milk and butter with plant-based alternatives.
