For the Chicken Thighs
- 1 ½ pounds boneless, skinless chicken thighs
- Nonstick cooking spray
- Kosher salt, 1 ½ teaspoons
- Black pepper, a few twists
For the Honey Mustard Glaze
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons honey (hot honey optional for spice)
- 1 tablespoon packed light brown sugar
- ½ teaspoon garlic powder
- ½ teaspoon mustard powder
- ½ teaspoon onion powder
- 2 cloves garlic, finely chopped or grated
Instructions
- Prep the oven and pan: Preheat the oven to 400°F. Arrange oven racks with one in the center and one at the top position under the broiler. Line a rimmed baking sheet with foil and lightly spray with nonstick cooking spray.
- Make the honey mustard glaze: In a small bowl, whisk together apple cider vinegar, Dijon mustard, honey, brown sugar, garlic powder, mustard powder, onion powder, finely chopped garlic, kosher salt, and black pepper until well combined. Adjust seasoning to taste.
- Season the chicken thighs: Place the chicken thighs in a large bowl and toss with one-third of the prepared glaze until evenly coated. Set aside to marinate while the oven finishes preheating.
- Roast the chicken: Arrange the glazed chicken thighs on the prepared baking sheet in a single layer, skin side up (or deboned side up for presentation). Bake on the center rack for 10 minutes.
- Broil to caramelize: Remove the tray from the oven and preheat the broiler to its highest setting. Drain any excess liquid from the pan. Brush half of the remaining glaze over the chicken thighs. Place the pan on the top rack directly under the broiler and broil for 4-5 minutes until the glaze is caramelized and golden.
- Flip and glaze again: Flip the chicken thighs over, brush with the remaining glaze, and return to the broiler for another 4-5 minutes until deeply caramelized and cooked through.
- Rest and serve: Let the chicken rest for a few minutes before slicing. Serve with your favorite sides like roasted potatoes and broccoli. Enjoy the flavorful, juicy honey mustard chicken thighs!
