Ingredients

Chickpea and Vegetable Mixture

  • 1 (15 oz.) can chickpeas, drained
  • 1 yellow pepper, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 small zucchini, halved and thinly sliced

Seasonings and Oil

  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the vegetables and chickpeas.
  2. Prepare the sheet pan: On a large baking sheet, arrange the drained chickpeas, sliced red onion, yellow and red peppers in a single, even layer to ensure even cooking.
  3. Add zucchini and drizzle oil: Add the thinly sliced zucchini to the pan and drizzle everything evenly with 3 tablespoons of olive oil.
  4. Season the mixture: Sprinkle chili powder, cumin, garlic powder, paprika, dried oregano, kosher salt, and freshly cracked black pepper over the vegetables and chickpeas. Toss everything together well to coat evenly with the oil and spices.
  5. Bake and broil: Roast in the preheated oven for 12 to 14 minutes. After baking, switch the oven to broil on high and broil the mixture for 1 to 3 minutes until the edges of the vegetables develop a nice dark char for extra flavor.
