A fresh and vibrant Shaved Brussels Sprouts Salad featuring thinly sliced Brussels sprouts and kale, toasted almonds, and hemp hearts, tossed in a zesty lemon-honey dressing. This quick and nutritious salad combines crunchy textures with bright flavors, perfect for a healthy lunch or side dish.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 1 lb Brussels sprouts
  • 2 cups kale

Nuts & Seeds

  • 1/2 cup sliced almonds
  • 1/4 cup hemp hearts

Dressing

  • 2 tablespoons olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon garlic powder
  • 1/4 – 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • Ground pepper (optional)

Instructions

  1. Shave the Brussels Sprouts: Use a food processor, mandolin slicer, box grater, or knife to thinly shave the Brussels sprouts. The food processor is the quickest method. Place the shaved Brussels sprouts into a large bowl.
  2. Slice the Kale: Roll the kale leaves together width-wise and slice them into fine ribbons lengthwise. Add the sliced kale to the bowl with the Brussels sprouts.
  3. Toast the Almonds: Spread the almonds on a baking sheet or heat in a dry skillet or toaster oven. Toast them for about 2 minutes until golden brown, stirring or shaking occasionally to avoid burning. Add the toasted almonds to the bowl followed by the hemp hearts.
  4. Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, garlic powder, salt, red pepper flakes, and optionally ground pepper until well combined.
  5. Toss and Massage: Pour the dressing over the ingredients in the large bowl. Use your hands to vigorously massage and toss the salad to ensure the dressing coats everything evenly and the kale softens slightly. Adjust seasoning to taste.
  6. Serve: Serve the salad immediately as is or topped with your favorite protein for a complete meal.

Notes

  • Shaving the Brussels sprouts thinly is essential for the best texture and flavor absorption.
  • Massaging the salad helps tenderize the kale and Brussels sprouts, making it easier to eat.
  • Toast the almonds carefully to prevent burning and to unlock their flavor.
  • You can substitute maple syrup for honey to make the dressing vegan.
  • Add cooked chicken, tofu, or chickpeas to make it a heartier meal.
