This vibrant Seitan Stir Fry is a delicious plant-based dish packed with colorful vegetables and flavorful seitan, all tossed in a savory, tangy sauce. Perfect for a quick weeknight meal, it combines crispy seitan with sautéed onions, bell peppers, shiitake mushrooms, and shredded carrots, coated in a thickened soy-sesame sauce. Garnished with fresh green onions, it’s a satisfying, nutritious vegan stir fry that pairs beautifully with rice.

  • Total Time: 25 minutes
  • Yield: 2 servings

Ingredients

Sauce

  • 1/4 cup vegetable broth
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 1/2 tsp cornstarch

Stir Fry

  • 8 oz seitan, cut into bite-sized pieces
  • 2 tbsp avocado oil, plus more as needed
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 5 shiitake mushrooms, sliced
  • 3/4 cup shredded carrots
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • Green onion for garnish, chopped

Instructions

  1. Prepare and Brown the Seitan: Dice the seitan into bite-size pieces. Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Add the seitan pieces and cook, stirring occasionally, until golden brown and slightly crispy, about 4-5 minutes. Use a slotted spoon to remove the seitan and set it aside while you prepare the vegetables.
  2. Mix the Sauce: In a small bowl, whisk together the vegetable broth, soy sauce, sesame oil, rice vinegar, maple syrup, and cornstarch until smooth and well combined. Set the sauce aside for later use.
  3. Sauté the Vegetables: Add another tablespoon of avocado oil to the same skillet. Add the thinly sliced onion, red bell pepper, and shiitake mushrooms along with a pinch of salt. Sauté over medium heat until the vegetables soften, about 5 minutes. If the mushrooms release a lot of liquid, add 1-2 tablespoons of water to help them cook down evenly without burning.
  4. Add Carrots and Garlic: Stir in the shredded carrots and minced garlic. Continue to sauté for an additional 2 minutes, allowing the garlic to become fragrant and the carrots to slightly soften.
  5. Combine Seitan and Sauce: Return the browned seitan back into the skillet with the vegetables. Stir everything together, then pour the prepared sauce over the mixture. Stir continuously as the sauce heats until it thickens slightly and evenly coats the seitan and vegetables. Adjust seasoning with salt and pepper to taste.
  6. Serve and Garnish: Serve the hot stir fry immediately over steamed rice or your preferred grain. Sprinkle chopped green onions on top for a fresh, bright garnish. Enjoy your flavorful and healthy seitan stir fry!

Notes

  • If mushrooms release too much water during cooking, adding water to help them cook down prevents sticking and burning.
  • Adjust sweetness and acidity of the sauce by adding more maple syrup or rice vinegar based on preference.
  • Seitan can be substituted with tofu or tempeh if preferred.
  • Serve with cooked rice, quinoa, or noodles to make a complete meal.
  • For extra crunch, garnish with toasted sesame seeds or chopped peanuts.
