Ingredients
Main Ingredients
- 1 cup dry red lentils
- 1/2 cup water (for blending)
- 1 clove garlic
- 1 tsp salt
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp smoked paprika
- 1/4 tsp turmeric
- 1 Tbsp nutritional yeast (optional)
- 2 Tbsp whole flax seeds
- 1 medium carrot
- 1/2 cup fresh chives, chopped
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp apple cider vinegar
Instructions
- Rinse and Soak Lentils: Thoroughly rinse the red lentils under cold water, then soak them in plenty of water for at least 2 hours to soften.
- Blend Lentils and Garlic: Drain the soaked lentils, then blend them with 1/2 cup fresh water and one clove of garlic in a high-speed blender until the mixture is completely smooth.
- Preheat Oven and Prepare Batter: Preheat your oven to 180°C (360°F). Transfer the blended lentil mixture to a bowl. Stir in salt, onion powder, paprika, smoked paprika, turmeric, and nutritional yeast if using.
- Prepare Flax and Vegetables: Grind the whole flax seeds in an electric grinder or small blender until finely ground, then add them to the batter. Grate the carrot and chop the fresh chives before adding them to the mixture along with baking powder, baking soda, and apple cider vinegar.
- Mix and Bake: Stir all ingredients thoroughly to combine. Spoon the batter into a parchment-lined muffin tin evenly. Bake for 25-30 minutes until the muffins are golden and set.
- Cool and Serve: Remove the muffins from the oven and allow them to cool on a cooling rack. Enjoy them warm or at room temperature as a nutritious savory treat!
