These delicious salmon patties are made from canned wild-caught pink salmon mixed with finely diced onions, breadcrumbs, and a touch of lemon juice. Pan-fried to golden perfection in a cast iron skillet, they’re quick to prepare and serve as a perfect light lunch or dinner option. Crispy on the outside and tender on the inside, these patties pair wonderfully with fresh lemon wedges and your choice of side dishes.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

Salmon Patty Ingredients

  • 3 x 5 oz. cans skinless, boneless pink salmon (wild caught)
  • ¼ cup onion, finely diced
  • ¼ tsp salt
  • ¼ tsp freshly cracked black pepper
  • 1 large egg, lightly beaten
  • 5 Tbsp plain breadcrumbs
  • 1 Tbsp lemon juice
  • ⅓ cup cooking oil (for frying)

Instructions

  1. Drain and Prepare Salmon: Drain the liquid from the canned salmon and place the salmon in a large bowl. If not using skinless/boneless salmon, carefully remove all bones and skin. Break up the salmon thoroughly with a fork to create a flaked texture.
  2. Mix Ingredients: Add the finely diced onion, salt, freshly cracked black pepper, lightly beaten egg, plain breadcrumbs, and lemon juice to the bowl containing the salmon. Mix all ingredients until well combined, ensuring even distribution for consistent patties.
  3. Shape Patties: Using your hands, take about 3-4 tablespoons of the salmon mixture and form into large, evenly sized patties. You should be able to make 6-7 patties total. Place them aside on a plate or tray while you prepare to cook.
  4. Heat Oil: Preheat a cast iron skillet over medium heat and add ⅓ cup cooking oil. Allow the oil to become hot enough for frying, which helps in achieving a crispy golden crust on the patties.
  5. Cook Patties: Cook the salmon patties in two batches to avoid overcrowding. Fry each patty for approximately 3 minutes on each side or until golden brown and cooked through. Handle gently when flipping to keep the patties intact and to maintain their shape.
  6. Rest and Serve: After frying, transfer the patties to a wire rack to drain any excess oil and maintain crispiness. Serve immediately while hot, optionally garnished with lemon wedges and accompanied by your favorite sides.

Notes

  • For crispier patties, ensure the oil is fully heated before adding the patties to the skillet.
  • Be gentle when flipping to prevent the patties from breaking apart.
  • If you prefer, you can substitute plain breadcrumbs with gluten-free breadcrumbs for a gluten-free version.
  • Leftover patties can be refrigerated for up to 2 days and reheated in a skillet or oven to maintain crispiness.
  • Serve with tartar sauce, a squeeze of fresh lemon, or a side of mixed greens for a complete meal.
