Ingredients
Pasta
- ½ kg (1 lb) pasta (tagliatelle, fettuccine, or linguine)
Salmon and Seasoning
- 200 g (7 oz) salmon fillet, skin removed
- ¼ tsp salt, or to taste
- Black pepper, to taste
Sauce
- 1 shallot, finely chopped
- 1 clove garlic, minced
- 1 tbsp butter
- 1 tbsp olive oil
- 125 ml (½ cup) chicken or vegetable broth
- 250 ml (1 cup) double/heavy cream
- 80 g (2 cups) mixed greens (spinach, arugula, or watercress)
- ½ lemon, zested, plus 1 tbsp juice
- 1 tbsp fresh parsley, chopped
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve a small amount of pasta water before draining the pasta.
- Prepare Salmon: While pasta cooks, remove skin and any bones from the salmon fillet. Cut into bite-sized pieces and season lightly with salt and pepper.
- Sear Salmon: Heat butter in a large frying pan over medium heat. Add the salmon pieces and sear on all sides for 2–3 minutes until cooked through. Transfer salmon to a plate and set aside.
- Sauté Aromatics: In the same pan, add olive oil followed by finely chopped shallot and minced garlic. Sauté over low heat for 1–2 minutes until fragrant and softened.
- Simmer Broth: Increase heat to medium and pour in chicken or vegetable broth. Let it simmer for 5–7 minutes until slightly reduced.
- Add Cream and Greens: Stir in heavy cream, mixed greens, salt, lemon zest, and lemon juice. Simmer gently until the greens wilt and the sauce is warmed through.
- Toss Pasta with Sauce: Add the drained pasta to the sauce and toss well to combine. If the sauce feels too thick, stir in a splash of the reserved pasta water to loosen it.
- Serve: Arrange the seared salmon on top of the pasta, garnish with chopped fresh parsley, and serve immediately for best flavor and texture.
Notes
- You can use either chicken or vegetable broth depending on your preference or dietary needs.
- If you prefer a lighter sauce, substitute half-and-half for heavy cream.
- Make sure to remove all bones from the salmon to ensure a pleasant eating experience.
- The mixed greens can be swapped for kale or Swiss chard if desired, but adjust cooking time accordingly as these greens are tougher.
- Reserve pasta water carefully to help adjust sauce consistency without thinning the flavor.
