These Raspberry Crumble Bars combine a buttery, tender crust with a sweet and tangy raspberry jam filling, topped with crumbly dough for a delightful texture contrast. Perfect for dessert or a sweet snack, they are easy to prepare and ideal for sharing.

  • Total Time: 55 minutes
  • Yield: 16 servings

Ingredients

Crust and Crumble

  • 1 cup butter (room temperature)
  • 1 cup granulated sugar
  • 1 egg yolk
  • 1 ½ teaspoons vanilla bean paste
  • 2 cups all purpose flour
  • 1 teaspoon kosher salt (or ½ teaspoon table salt)

Filling

  • 1 cup raspberry jam

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C). Line a 9×13 inch baking dish or a quarter sheet pan with parchment paper for easy removal and cleanup.
  2. Prepare Dough: In a large bowl or using a stand mixer with the paddle attachment, beat together the butter and granulated sugar on medium speed until the mixture is light and fluffy. Add the egg yolk and vanilla bean paste, then beat until fully combined.
  3. Mix Dry Ingredients: Add the all purpose flour and kosher salt to the wet mixture. Mix on low speed just until a soft dough forms. Be careful not to overmix to keep the texture tender.
  4. Form Base Layer: Reserve about half of the dough and refrigerate it. Press the remaining half evenly into the prepared pan, forming the bottom crust. Bake this layer for 10 minutes, or until it is very lightly golden brown. Remove from oven and let cool slightly.
  5. Add Filling and Crumble Topping: Spread the raspberry jam evenly over the cooled bottom crust. Then crumble the reserved dough over the jam layer evenly.
  6. Bake Bars: Return the pan to the oven and bake at 325°F for 20 to 30 minutes, or until the crumble topping is golden brown and cooked through.
  7. Cool and Serve: Allow the bars to cool completely for at least 4 hours; chilling is recommended to make cutting easier but not necessary. Cut into squares and serve.

Notes

  • Use room temperature butter for easier mixing and better texture.
  • Vanilla bean paste adds more flavor than vanilla extract but can be substituted if needed.
  • For best results, chill the dough before crumbling it on top to maintain the crumble texture during baking.
  • Bars are best served chilled after cooling to keep their shape when cutting.
  • You can substitute raspberry jam with other fruit preserves like strawberry or apricot.
