Ingredients
Noodles and Vegetables
- 6 ounces ramen noodles (2 blocks)
- 2 cups fresh chopped broccoli, bok choy or veggies of choice
- 1/2 cup shelled edamame
Aromatics and Sauce
- 5 cloves garlic (2 1/2 tsp minced)
- 1 tbsp fresh grated ginger (can substitute 1 tsp dried, fresh preferred)
- 1/3 cup chopped green onions/scallions (white part for stir fry; reserve remainder for garnish)
- 1 tbsp oil (vegetable or olive)
- 3-4 tbsp low sodium soy sauce or tamari*
- 2 tbsp vegetable or chicken broth
- 2 tsp toasted sesame oil
- 1 tbsp sriracha (adjust to spice preference)
- 1 tbsp sweet chili sauce (more if you prefer sweeter flavor)
Instructions
- Cook noodles: Bring a large pot of water to a boil and cook the ramen noodles according to package instructions, typically about 2 minutes. Be careful not to overcook to avoid chewy or soggy noodles. Gluten-free noodles may require longer cooking.
- Saute aromatics: Heat the oil in a pan over medium heat. Add the minced garlic, chopped scallion whites, and grated ginger. Sauté until the garlic is golden brown and fragrant, taking care not to burn it.
- Add vegetables: Add the shelled edamame and chopped vegetables to the pan. Sauté until they are fork-tender or wilted, depending on the vegetables chosen.
- Prepare sauce: In a small bowl, whisk together the soy sauce or tamari, vegetable or chicken broth, toasted sesame oil, sriracha, and sweet chili sauce until well combined.
- Combine ingredients: Add the cooked noodles and sauce to the pan with the vegetables. Toss gently and let everything combine over very low heat to allow the flavors to meld.
- Adjust seasoning: Taste the stir fry and adjust the seasoning as needed, commonly by adding more soy sauce or sriracha depending on your preference for saltiness and spice.
- Serve: Serve the stir fry topped with sesame seeds and the remaining chopped scallions. Enjoy immediately.
Notes
- Use low sodium soy sauce or tamari to control salt levels, adjusting seasoning at the end as desired.
- Fresh ginger provides the best flavor but dried ginger can be substituted if necessary.
- Choose your favorite vegetables such as broccoli, bok choy, bell peppers, or snap peas for variety.
- Be careful not to overcook the ramen noodles for best texture.
- Additional toppings like sesame seeds and extra scallions add crunch and freshness.
