Instructions

  2. Soak Quinoa: Transfer the rinsed quinoa to a large bowl and cover with approximately 2 cups of water. Let it soak for at least 2 hours to soften the grains and make blending easier.
  3. Drain and Rinse Again: After soaking, drain the quinoa and rinse it a second time under cold water to remove any excess starch.
  4. Blend Batter: Add the drained quinoa and 1 cup of water to a high-speed blender. Blend on high for 1 to 2 minutes until the batter is completely smooth, resembling the consistency of crepe batter.
  5. Preheat Pan: Heat a small nonstick pan over medium heat. Optionally, wipe the surface with a little olive oil using a paper towel to prevent sticking.
  6. Cook Tortillas: Pour some batter into the hot pan and tilt it to spread the batter as thinly as possible. If batter is thick, use a spoon or ladle to spread it evenly. Cook for 2 to 3 minutes on low to medium heat until the center sets and edges lift.
  7. Flip and Finish Cooking: Carefully flip the tortilla using a rubber spatula and cook for an additional minute until cooked through.
  8. Cool and Repeat: Transfer the cooked tortilla to a cooling rack to prevent sogginess. Repeat the cooking process with the remaining batter until all tortillas are made.
