Ingredients
Quinoa
- 1 cup uncooked quinoa
- 2 cups water
Beef Mixture
- 1 lb ground beef
- 2 tsp garlic powder
- 1 tsp onion powder
Vegetables and Seasonings
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup broccoli florets
- 1 cup chopped carrots
- 1 cup baby spinach
- 2 spring onions, chopped
- 2 tbsp soy sauce
- ¼ tsp red pepper flakes (for serving)
Instructions
- Prepare Quinoa: Rinse 1 cup of uncooked quinoa and add it to a pot with 2 cups of water. Cover and bring to a boil over medium-high heat. Once boiling, reduce heat to a simmer and cook without stirring until the water is absorbed. Remove from heat, keep covered, and let it sit for 10 minutes. Fluff quinoa with a fork before serving.
- Cook Ground Beef: Heat a large skillet over medium-high heat. Add 1 lb ground beef along with 2 tsp garlic powder and 1 tsp onion powder. Break beef apart with a spatula and cook until no longer pink. Use a folded paper towel and spatula to soak up excess grease. Transfer beef to a plate and set aside.
- Sauté Garlic: In the same skillet, add 1 tbsp olive oil and 3 minced garlic cloves. Cook over medium-high heat for 1 minute until fragrant.
- Cook Vegetables: Add 1 cup broccoli florets and 1 cup chopped carrots to the skillet. Cook for 2 minutes. Add 1/4 cup water and continue cooking until the vegetables are tender by testing with a fork, adding more water if needed.
- Add Spinach and Spring Onions: Stir in 1 cup baby spinach and 2 chopped spring onions. Cook for 1 minute until the spinach wilts.
- Combine and Heat Through: Return the cooked ground beef to the skillet. Add 1 cup cooked quinoa, 2 tbsp soy sauce, and 1/4 tsp red pepper flakes. Stir everything together and cook for 1 minute until heated through. Adjust seasoning with soy sauce, salt, pepper, and additional red pepper flakes as desired. Serve warm.
