Ingredients
Protein & Vegetables
- ½ tablespoon extra virgin olive oil
- ½ pound 93% lean ground turkey
- ½ yellow onion, diced
- 3 cloves garlic, chopped
Herbs & Spices
- ¼ teaspoon red pepper flakes
- 1 teaspoon kosher salt, divided
- 2 teaspoons fresh sage, chopped
- 1 teaspoon fresh thyme leaves
Liquids & Bases
- 15-ounce can pumpkin puree
- 3 ¼ cups chicken broth (or chicken bone broth)
Pasta & Cheese
- 8 ounces lasagna noodles, broken into bite-sized pieces
- ½ cup part-skim ricotta cheese
- ¼ cup parmesan cheese, divided
- ¾ cup grated part-skim mozzarella cheese
Garnish
- Chopped parsley
Instructions
- Heat the Skillet: Place a large 12-inch oven-safe nonstick skillet with a fitted lid over high heat to warm up.
- Cook Turkey and Aromatics: Add the olive oil, ground turkey, diced onion, chopped garlic, half the salt, and red pepper flakes to the skillet. Break up the turkey with a wooden spoon and cook for 5-7 minutes until fully cooked. Stir in the fresh sage and thyme and cook for another minute until fragrant.
- Add Pumpkin and Broth: Stir in the pumpkin puree, chicken broth, and remaining salt. Bring the mixture to a gentle simmer. Add the broken lasagna noodles, stirring to combine and spreading them evenly, ensuring the noodles are submerged in the liquid.
- Simmer Pasta Covered: Reduce heat to medium, cover the skillet, and simmer gently for 18-20 minutes. Stir occasionally to prevent noodles from sticking to each other or the pan. Cook until noodles are tender and the sauce has thickened.
- Incorporate Cheeses: Remove skillet from heat and stir in ricotta cheese and half of the parmesan cheese. Then evenly sprinkle mozzarella and the remaining parmesan cheese on top.
- Broil to Finish: Transfer the skillet to the broiler set on high, placing it on the second rack from the top. Broil for 2-3 minutes until the cheese is melted and lightly browned. Garnish with chopped parsley and serve immediately.
Notes
- Use a 12-inch oven-safe skillet with a lid for best results.
- Breaking the lasagna noodles into bite-sized pieces speeds cooking and makes it easy to eat straight from the skillet.
- Keep stirring occasionally during simmering to avoid noodles sticking to the bottom.
- Fresh herbs can be substituted with ½ teaspoon dried sage and thyme if needed.
- Adjust red pepper flakes to your preferred spice level or omit for milder flavor.
- If you prefer a vegetarian version, substitute the ground turkey with cooked lentils and use vegetable broth.
