For the Bars

Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly mist a 9×13-inch baking dish with cooking spray to ensure the bars do not stick.
- Mix Wet Ingredients: In a mixing bowl, combine the avocado oil, brown sugar, egg, pumpkin puree, and vanilla bean paste. Whisk these ingredients together until the mixture is smooth and well combined.
- Add Dry Ingredients: Add the all-purpose flour, ground cinnamon, ground ginger, ground cloves, baking powder, baking soda, and fine salt to the wet ingredients. Stir just until everything is combined to avoid overmixing, then gently fold in the semi-sweet chocolate chips.
- Transfer Batter to Pan: Pour the batter into the prepared baking dish and smooth the top evenly. If desired, sprinkle a few extra chocolate chips on top for a decorative and extra chocolaty finish.
- Bake: Place the pan in the preheated oven and bake until a toothpick inserted into the center comes out clean, about 18-20 minutes. This ensures the bars are fully cooked but still moist.
- Cool and Serve: Remove the bars from the oven and allow them to cool completely in the pan before cutting into 24 pieces for serving.
