Ingredients
Vegetables & Herbs
- ½ pound Yukon gold potatoes (diced into small pieces)
- 1 small onion (finely diced)
- ¼ cup chives (finely diced)
- ½ cup finely chopped spinach (tightly packed, chopped)
Egg Mixture
- 6 large eggs
- 1 cup cottage cheese
Cheese & Dairy
- 1 cup shredded cheddar cheese
Seasonings & Oils
- ½ tablespoon olive oil
- ½ teaspoon fine sea salt
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Freshly ground black pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Prepare your silicone molds or a 12-cavity muffin tin by greasing them thoroughly to prevent the egg bites from sticking.
- Sauté Potatoes and Onions: Heat the olive oil in a large skillet over medium-high heat. Add the diced potatoes and finely diced onion to the hot oil. Season with sea salt, freshly ground black pepper, garlic powder, and paprika. Sauté for about 8 minutes until the potatoes are just crisp yet tender. Remove the skillet from heat once done.
- Blend Egg Mixture: In the base of a blender, combine the 6 large eggs with 1 cup of cottage cheese. Blend until the mixture is creamy smooth without any lumps or chunks.
- Assemble Egg Bites: Evenly divide the sautéed potato and onion mixture among the molds or muffin cavities. Add half of the shredded cheddar cheese along with all the diced chives and chopped spinach over the potato layer. Pour the creamy egg and cottage cheese mixture on top. Finally, sprinkle the remaining shredded cheddar cheese and additional chives on top for garnish.
- Bake and Broil: Place the molds or muffin tin in the oven and bake for 18-20 minutes until the egg bites are set. For a golden browned top, broil the egg bites for 1-2 minutes—watch carefully to prevent burning.
Notes
- Use silicone molds for easy removal of egg bites without sticking; otherwise, ensure muffin tins are well-greased.
- The broiling step is optional but recommended to achieve a nicely browned top.
- These egg bites can be stored in the fridge for up to 5 days and reheated gently.
- Feel free to substitute cheddar cheese with other cheese varieties like mozzarella or Monterey Jack.
- For extra flavor, add a pinch of smoked paprika or fresh herbs like parsley or dill.
