Ingredients
For The Crust:
- 1/2 cup unsalted butter at room temperature
- 4 1/2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour plus extra for dusting
For The Filling:
- 3/4 cup corn syrup
- 1/4 cup packed brown sugar
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1 pinch kosher salt
- 3/4 teaspoon vanilla bean paste
- 1 1/2 cups pecan pieces
Other:
- Cooking spray for greasing baking dish
- Parchment paper
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly coat an 8×8-inch baking pan with cooking spray, then line it with parchment paper, allowing the paper to hang over the sides for easy removal of bars later.
- Make the Crust: In a bowl, beat the room-temperature butter with granulated sugar and salt until smooth and creamy. Gradually mix in 1 cup of all-purpose flour until a crumbly dough forms. If too dry, add a small splash of water. Dust your hands with flour and evenly press the dough into the bottom of the prepared pan, creating an even layer.
- Bake the Crust: Bake the crust in the preheated oven for 20 to 22 minutes, or until the edges turn golden brown. Remove from the oven once done.
- Prepare the Filling: While the crust bakes, whisk together corn syrup, brown sugar, eggs, 2 tablespoons of flour, a pinch of kosher salt, and vanilla bean paste until well combined. Stir in the pecan pieces evenly.
- Assemble and Bake: Immediately after removing the crust from the oven, pour the pecan filling over the hot crust, spreading it evenly. Return the pan to the oven and bake for an additional 25 to 30 minutes until the filling is set and deep golden brown on top.
- Cool and Chill: Remove the pan from the oven and place it on a wire rack to cool completely. After cooling, refrigerate for at least 1 hour to set before lifting out using the parchment paper overhang and cutting into 12 bars.
Notes
- Room temperature butter is key to achieving a smooth crust dough.
- If the dough is crumbly, add water sparingly to bind it better.
- Using parchment paper with overhang ensures easy removal of the bars without damage.
- Refrigerating bars before cutting helps them hold shape and improves slicing.
- These bars can be stored in an airtight container in the refrigerator for up to 5 days.
