A flavorful and quick Peanut Butter Chicken recipe that combines creamy peanut butter with Thai sweet chili sauce to create a deliciously tangy and spicy dish. Perfectly sautéed chicken breast strips simmered in a rich sauce, served over hot cooked rice with optional fresh toppings for an easy weeknight dinner.

  • Total Time: 25 minutes
  • Yield: 2 servings

Ingredients

Peanut Butter Sauce

  • 1/2 cup water
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon Thai sweet chili sauce
  • 4 teaspoons white vinegar
  • 4 teaspoons soy sauce
  • Dash crushed red pepper flakes

Chicken and Aromatics

  • 3/4 pound boneless skinless chicken breasts, cut into 1-inch strips
  • 4 garlic cloves, minced
  • 2 teaspoons minced fresh gingerroot
  • 2 teaspoons canola oil

To Serve

  • Hot cooked rice
  • Optional: Sliced green onions
  • Optional: Sliced red Thai chili
  • Optional: Cilantro leaves
  • Optional: Lime wedges
  • Optional: Sesame seeds

Instructions

  1. Prep the sauce: In a small bowl, combine the water, creamy peanut butter, Thai sweet chili sauce, white vinegar, soy sauce, and crushed red pepper flakes. Stir well until the mixture is smooth and set aside.
  2. Sauté the chicken: Heat the canola oil in a large skillet over medium-high heat. Add the chicken strips along with the minced garlic and ginger. Cook and sauté for about five minutes, stirring occasionally, until the chicken is lightly browned.
  3. Add the sauce: Pour the prepared peanut butter sauce into the skillet with the chicken. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for about five minutes. Stir frequently until the chicken is cooked through and the sauce thickens slightly. Ensure the chicken’s internal temperature reaches at least 165°F for safety.
  4. Serve the chicken: Spoon the peanut butter chicken over hot cooked rice. Top with optional sliced green onions, red Thai chili, cilantro leaves, sesame seeds, and serve with lime wedges to add a fresh citrusy kick.

Notes

  • Use creamy peanut butter for a smoother sauce; natural peanut butter may alter the texture.
  • Adjust crushed red pepper flakes according to your preferred spice level.
  • Make sure to cook chicken to an internal temperature of 165°F for safe consumption.
  • Serve immediately for best flavor and texture.
  • This dish pairs well with steamed vegetables or a simple cucumber salad.
