  • 1 cup (180g) semi-sweet chocolate chips (use dairy free for vegan)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides to easily lift the baked bars out. Set aside.
  2. Mix Ingredients: In a large bowl or the bowl of a stand mixer, mash the bananas thoroughly. Beat or whisk in peanut butter, coconut or brown sugar, applesauce, almond milk, baking powder, salt, cinnamon, vanilla bean paste, and oats in the order listed. The batter will be thick but still pourable.
  3. Bake the Bars: Pour or spoon the batter evenly into the prepared pan. Bake for 25-28 minutes, or until the center is set but still soft to touch.
  4. Cool the Bars: Remove the pan from the oven and let it cool at room temperature for 30-60 minutes. Then place the pan in the refrigerator for 1 hour to chill, which makes the bars easier to cut.
  5. Slice and Serve: Use the parchment paper overhang to lift the bars from the pan. Cut into 16 bars. Optionally, drizzle melted peanut butter over the top for extra flavor.
