A quick and flavorful Parmesan Beans recipe featuring creamy Cannellini beans simmered with garlic, olive oil, vegetable broth, and topped with grated Parmesan cheese. Perfect as a hearty side dish or a light main course, ready in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Ingredients

  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 (15 oz) cans Cannellini beans, drained (do not rinse)
  • 1/2 cup vegetable broth (or chicken broth)
  • 1/3 cup grated Parmesan cheese
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Prepare Garlic: Mince the garlic cloves finely and add them to a large skillet with the olive oil. Sauté over medium heat for about one minute until the garlic is fragrant but not browned.
  2. Add Beans and Broth: Drain the Cannellini beans, but do not rinse them. Add the beans and vegetable broth to the skillet with the garlic and olive oil. Stir gently to combine all ingredients.
  3. Simmer Beans: Bring the bean mixture to a simmer. Allow it to simmer gently for about 10 minutes, stirring occasionally, until the beans thicken slightly and the spoon leaves a trail when stirred through the mixture.
  4. Add Cheese and Season: Stir in the grated Parmesan cheese and freshly cracked black pepper. Taste and adjust seasoning by adding more Parmesan, pepper, or salt as desired. Serve the beans hot for maximum flavor.

Notes

  • Do not rinse the beans after draining to retain their creamy texture and some liquid.
  • Use vegetable broth to keep the dish vegetarian or chicken broth for additional flavor.
  • Adjust the thickness by simmering longer if a thicker consistency is preferred.
  • Freshly grated Parmesan is recommended for best taste and melting quality.
