Ingredients
For the Fish
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4 skinless tilapia fillets
- Salt and freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
For the Lemon Cream Sauce
- 2 tablespoons butter, divided
- 3 cloves garlic, minced
- ½ cup low sodium chicken broth
- ¼ cup heavy cream
- 2 tablespoons fresh lemon juice
- Salt and freshly ground black pepper, to taste
Instructions
- Heat the skillet: Set a skillet over medium heat and heat 1 tablespoon olive oil and 1 tablespoon butter until melted and hot.
- Cook the tilapia: Season the tilapia fillets with salt and freshly ground black pepper. Transfer the fillets to the skillet and cook for 3 minutes on each side until the fish is cooked through and golden. Remove the fish from the skillet and set aside.
- Make the sauce base: Add 1 tablespoon butter to the same skillet and melt over medium-high heat. Stir in the minced garlic and cook for 15 seconds until fragrant.
- Add chicken broth: Slowly whisk in the low sodium chicken broth and cook, stirring occasionally, for about 4 minutes or until the broth has reduced by one-third.
- Add cream and lemon juice: Reduce the heat to medium-low and add the remaining butter. Slowly whisk in the heavy cream until the sauce is smooth. Add fresh lemon juice and whisk continually to combine, preventing the cream from curdling.
- Season the sauce: Season the sauce with salt and freshly ground black pepper to taste. Adjust seasoning as needed, then remove from heat.
- Combine and serve: Pour the lemon cream sauce over the cooked tilapia fillets, or return the fish to the skillet and spoon the sauce over it. Garnish with chopped fresh parsley and serve immediately.
