A creamy, flavorful one-skillet smothered chicken recipe featuring tender chicken breasts cooked to perfection in a rich Parmesan cream sauce with aromatic herbs and spices, perfect for a quick and satisfying dinner.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Chicken

  • 1 tablespoon avocado oil
  • 2 chicken breasts, halved
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon black pepper

Sauce

  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup cream of chicken soup
  • ½ cup chicken stock
  • 1 teaspoon low-sodium chicken Better Than Bouillon
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • 1 cup grated or shredded Parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Heat the oil: Add the avocado oil to a skillet over medium heat and allow it to get hot for 2-3 minutes to prepare for searing the chicken.
  2. Season the chicken: Season both sides of the chicken breasts with coarse kosher salt and black pepper evenly.
  3. Sear the chicken: Place the chicken in the hot skillet and sauté for 4 minutes without moving, then flip and cook for an additional 3-4 minutes until the chicken reaches an internal temperature of 165°F and juices run clear.
  4. Remove chicken and keep warm: Take the cooked chicken out of the skillet and set it aside, covering with a lid to retain heat.
  5. Lower the heat: Reduce the skillet heat to low-medium to prepare for sauce creation.
  6. Sauté garlic: Add the minced garlic to the skillet and stir for about 1 minute until fragrant.
  7. Create the sauce: Stir in heavy cream, cream of chicken soup, chicken stock, chicken Better Than Bouillon, onion powder, garlic powder, paprika, dried thyme, and dried rosemary. Stir continuously until the sauce thickens slightly.
  8. Add cheese to sauce: Mix in the grated Parmesan cheese until fully combined and melted into the sauce.
  9. Return chicken to skillet: Place the cooked chicken breasts back into the skillet, nestling them into the cream sauce.
  10. Simmer: Allow the chicken to simmer gently in the sauce until heated through, about 2-3 minutes.
  11. Top with sauce: Spoon the creamy Parmesan sauce generously over the chicken breasts.
  12. Garnish and serve: Sprinkle the chopped parsley over the top for a fresh, vibrant finish before serving.

Notes

  • Ensure the chicken reaches 165°F internal temperature for safe consumption.
  • Use fresh garlic for best flavor, but garlic powder is also included as seasoning in the sauce.
  • This dish pairs well with steamed vegetables, rice, or mashed potatoes.
  • The sauce can be adjusted for thickness by controlling cooking time during simmering.
  • Leftover sauce can be stored and reheated gently, adding a splash of chicken stock if it thickens too much.
