Ingredients
Vegetables & Aromatics
- 1 medium white or yellow onion, chopped into small pieces
- 4 cloves garlic, minced
- 1 8 ounce package white mushrooms, chopped or sliced
Liquids & Dairy Substitutes
- 2 cups vegetable broth
- 2 cups unsweetened dairy-free milk (soy milk recommended)
Dry Ingredients & Seasonings
- 3 Tbsp neutral oil (avocado oil used)
- 3 Tbsp all-purpose flour (substitute with gluten-free flour)
- 7 ounces (7-8) lasagna noodles (gluten-free noodles substituted)
- 1 cup cooked white beans (canned beans used)
- 2 Tbsp nutritional yeast
- 1 1/2 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp garlic powder (optional)
Instructions
- Sauté the aromatics: Heat a large pot over medium heat and add the oil. Cook the chopped onion until soft and translucent, about 4 minutes, then add the minced garlic and cook for another 2 minutes until fragrant.
- Create the roux base: Add the flour to the pot and stir it well to combine with the onion and garlic mixture, ensuring it coats the veggies evenly to help thicken the sauce later.
- Add liquids and noodles: Pour in the vegetable broth while stirring continuously. Break the lasagna noodles into bite-sized pieces and add them to the pot, stirring to combine.
- Incorporate seasonings and milk: Pour in the unsweetened dairy-free milk, then add Italian seasoning, salt, pepper, and optional garlic powder. Stir frequently and cook until the noodles are tender and fully cooked, about 7-8 minutes.
- Finish with mushrooms and beans: Add the chopped mushrooms, cooked white beans, and nutritional yeast to the pot. Continue cooking for 3-4 minutes until the mushrooms soften and everything is heated through.
- Adjust seasoning and serve: Taste the pasta and adjust seasoning with extra salt, pepper, or Italian seasoning if needed. Remove from heat, divide into bowls, and garnish with fresh parsley or crushed red pepper flakes if desired.
